Take an ovenproof baking dish and cover the bottom with potatoes sliced less than 1 cm thick
Cover the potatoes with slices of white onion
Sprinkle everything with a mixture of breadcrumbs and grated Pecorino cheese; season with salt, but not too much
Cover everything with red tomatoes cut in half, skin side up
Drizzle generously with olive oil
Pour enough water into the dish to cover the potatoes but not the layer of onions
Place in a hot oven: when the water has evaporated the dish will be ready
