Provençal Pizza is a delicious variant of the classic pizza enriched with a mix of Provençal aromatic herbs. Its preparation requires few steps and the main ingredients are flour, yeast, Herbes de Provence, and a delicious tomato sauce. Prepare the sauce: clean and chop the onion
Place it in a saucepan along with the tomatoes and their juice, garlic, oregano, and sugar
Add salt and pepper
Cook over moderate heat, stirring occasionally for thirty minutes until the sauce thickens
Let it cool
Prepare the dough: sift 225 g of flour, baking powder, and salt into a bowl
Add 25 g of butter, work with your hands until the mixture resembles breadcrumbs, season with pepper and Herbes de Provence
Moisten with milk, mix until you get a soft dough
Preheat the oven to 200 degrees (thermostat 6)
Butter the baking sheet, flour the work surface
Roll out the dough into a circle 25 cm in diameter and place it on the buttered sheet
Spread the sauce over the dough disc, leaving a 2 cm border, and sprinkle with three-quarters of the grated pecorino
Wash the peppers, remove seeds and white filaments, and slice them thinly
Clean the champignons, wash, dry, and slice them
Slice the olives
Arrange the salami slices slightly overlapping in a ring on the tomato sauce
Place the pepper rings on the salami, then the olive slices and half of the champignon slices
Lightly salt, pepper, and sprinkle with oregano
Add the remaining grated cheese and decorate with the remaining champignon slices
