Roughly peel the quinces, cut them into quarters, and remove the cores
Place the cores and peels in a pot and cover with water
Cook for 20 minutes
Let cool
Strain this juice through a very fine cloth
Let it drain overnight
In the morning, press a little more
Weigh the juice and add the same weight of sugar
Cook for 30 minutes, adding the lemon juice
