Raisin fritters are delicious fried sweets, soft inside and crispy outside. The sultana raisins give them a pleasant sweet and fruity flavor. These fritters are perfect to enjoy during Carnival season, but are great on any other occasion as well.
Put the butter in a pot, add the water and bring to a boil
Remove from the heat, add all the flour and stir until the dough becomes a smooth ball; return to the heat and incorporate the sugar, grated lemon zest and one egg at a time, mixing well: the dough should have a stretchy consistency; let cool, then add the yeast and the sultanas already soaked and squeezed
Heat the olive oil well and fry spoonfuls of the batter in it
Drain and dust with icing sugar

Store the raisin fritters in an airtight container at room temperature for 2-3 days.
