In a pot, place the butter, add the water, and bring to a boil
Remove from heat, pour in all the flour, and stir until the dough becomes a smooth ball; place back on the heat, incorporate sugar, grated lemon zest, and one egg at a time, mixing well: the dough should have a stringy consistency; let cool, add yeast and raisins already soaked and squeezed
