Mix the egg yolks, half of the sugar, and the boiled milk with the dissolved gelatin sheets
Let cool and blend with the raspberry syrup
Fold in the whipped cream, the remaining sugar, and the egg whites beaten to stiff peaks; mix and pour into 4 molds
Keep in the freezer for at least 12 hours
Serve with peach purée and garnish with fruit
