
Red wine sauce is a rich-flavored accompaniment, perfect to pair with roasted or braised meats. Made with beef bones, beef stew meat and red wine, this sauce adds a tasty, succulent note to your dishes. Try it to enhance the flavor of your favorite meats.









Brown the bones and the stew meat; add the aromatics cut into large pieces, the pork rind and half of the onions, browning everything.
Deglaze with half of the wine, add the tomato preserve, sprinkle the flour and continue frying, pour in the stock, add the aromatics and cook for 2 hours.
Combine the red wine and onion sauce, strain and season.
Red wine and onion sauce: cook 15 cl of red wine with 50 g of finely chopped onions until you obtain a sort of syrup.
