Bring the milk to a boil, add the rice and the lemon zest.
Cook, stirring, until all the milk has been absorbed; add the peeled and chopped almonds, the whole eggs, 120 g of sugar, and turn off the heat.
Caramelize the remaining sugar in a baking pan, pour in the rice, level it, and bake at 180 degrees for 25 minutes.
Serve cold, cut into diamond-shaped slices.
