Cook the rice in milk, adding a pinch of salt and the lemon zest
Stir occasionally and when it is cooked, remove from heat, add the sugar and let it cool for a moment
Gradually add the flour, the sultanas (which you have soaked in warm water for some time), and the candied fruit
Finally, pour in the egg yolks and the egg whites beaten to stiff peaks
With floured hands, make small balls and then flatten them
Coat them in flour and fry them in hot oil
Drain them and place them on absorbent paper to remove excess oil
Serve them hot, sprinkled with powdered sugar
