The quantities are for 40 fritters
Squeeze the ricotta well in a double gauze to make it dry, then put it in a bowl, add a pinch of salt, the sugar, and the flour sifted in like rain
Incorporate two egg yolks to obtain a smooth and homogeneous mixture; then flavor it with two tablespoons of liqueur and form 12 small diamonds, 12 half-moons, and 12 slightly notched round fritters using pastry cutters for all these shapes; also make three balls
Dip the shapes in the remaining 2 beaten eggs and then in the breadcrumbs (if you prepared it yourself, sift it first with a fine-mesh sieve); fry them a few at a time in hot oil, draining them when they are golden and placing them temporarily on absorbent paper
Then arrange them on a serving dish and serve immediately
