

Ricotta fritters are delicious balls of sweetness perfect for a tasty snack or a special breakfast. Fresh ricotta gives them a soft and creamy texture, while powdered sugar enhances their sweet flavor. Thoroughly squeeze the ricotta in a double cheesecloth to make it dry, then place it in a bowl, add a pinch of salt, the sugar, and the flour sifted in gradually
Incorporate the two yolks to obtain a smooth and homogeneous mixture; flavor it with two tablespoons of liqueur and form 12 small rhombuses, 12 half-moons, and 12 slightly notched round fritters using pastry cutters for all these shapes; also make three balls
Dip the forms in the remaining 2 beaten eggs and then in breadcrumbs (if you prepared them yourself, sift them first with a fine sieve); fry a few at a time in hot oil, draining them when golden and temporarily placing them on absorbent paper
Then arrange them on a serving plate and serve immediately
