Pepper and salt the chicken inside and tie it with a thin white kitchen twine
In a pan heat the oil add chopped onion, carrot, celery, and rosemary and when the mixture has browned, place the chicken in and brown it over high heat for a quarter of an hour
Salt, cover, and cook on low heat for 40-50 minutes
If necessary, moisten it with a little hot water
When done (by piercing with a fork, no blood or pink liquid should come out) remove the twine, cut the chicken, and serve it hot with buttered carrots
