Pepper and salt the chicken inside and tie it with thin kitchen twine
In a saucepan, heat the oil and add chopped onion, carrot, celery, and rosemary, and when the mixture is colored, place the chicken in and brown it over high heat for a quarter of an hour
Salt, cover, and cook over low heat for 40-50 minutes
If necessary, moisten it with a little hot water
Once cooked (when poked with a fork, no blood or pink liquid should come out), remove the twine, cut the chicken, and serve hot with buttered carrots
