Season the inside of the chicken with salt and pepper, then tie it with thin white kitchen string
In a pan heat the oil, add chopped onion, carrot, celery and rosemary, and when the mixture has taken on color place the chicken in it and brown it over high heat for about fifteen minutes
Season, cover and cook over low heat for 40-50 minutes
If necessary, baste it with a little hot water
When cooked through (piercing with a fork should not release blood or pink liquid), remove the string, carve the chicken and serve it hot with buttered carrots
