Toasted Almonds are crunchy and delicious cookies made with almonds, egg whites, and powdered sugar. They are perfect to enjoy during a snack or to accompany a cup of hot tea. This recipe originates from Sicily but is widespread throughout Italy.
Dip the almonds in a saucepan full of boiling water, drain them after a couple of minutes, quickly pass them in cold water, then peel them
Place all the almonds on a baking sheet and toast them in the preheated oven (200 degrees) for 10-15 minutes until they are slightly colored, then let them cool
In the meantime, prepare the glaze: beat the egg whites until stiff in a bowl, then gradually incorporate the powdered sugar
Gently mix the mixture until it becomes quite thick
At this point, line a couple of cardboard trays with a sheet of wax paper, then dip the almonds one by one in the egg white and sugar mixture and place them on the trays, making sure to space them well apart
Transfer the trays to a cool, airy place and let the glaze dry: it takes about 24 hours
After this time, if the glaze is completely dry, gently detach the 'toasted almonds' from the wax paper
Arrange them on a serving plate and serve
If you don't consume them immediately, store them in tin boxes
