Rosehip jam is a delicious sweet preparation made with rosehip fruits. It is a very popular traditional recipe, especially in Italy. First, go and pick the well-ripened rosehip fruits
Wash and clean the fruits, trying to discard as many seeds as possible (and as little pulp as possible...)
From one kilo of fruits, you will have about 250 g of skins and pulp and another 100 g of seeds that you couldn't remove
Add 1/2 glass of water and put on a rather low heat
Let it cook for half an hour, then pass everything through a sieve, finally removing the seeds
The result strongly resembles tomato puree
Put it back on the heat
Add another half glass of water and 350 g of sugar (remember that rosehip is quite tart)
Let it cook for another half hour, stirring, then let it cool and put it in jars
