
Dog rose jam is a delicious sweet preparation made with the fruits of the dog rose. It is a very popular traditional recipe, especially in Italy. This jam has a unique and intense flavor, with a delicate citrus note. It is perfect for spreading on slices of toasted bread or for homemade desserts. Dog rose is rich in vitamin C and antioxidants, making this jam not only tasty but also healthy.



First, go and pick the fully ripe dog rose fruits.
Wash and clean the fruits, trying to remove as many seeds as possible (and as little pulp as possible...)
From one kilogram of fruits, you will end up with 250 g of skins and pulp and another 100 g of seeds that you couldn't remove.
Add 1/2 glass of water and put it on a low heat.
Let it cook for half an hour, then pass everything through a sieve to finally remove the seeds.
The result resembles tomato puree remarkably.
Put it back on the heat, add another half glass of water and 350 g of sugar (remember that dog rose is quite sour).
Let it cook for another half hour while stirring, then let it cool and put it in jars.
