Rosehip jam with honey is a delicious sweet preserve made with rosehip berries and honey. This jam is rich in vitamin C and is perfect for spreading on slices of bread or filling desserts.
Collect the rosehip berries when they are so ripe that they easily detach from the branch, and gather plenty because each berry contains very little pulp
Clean them and remove the black dot at one end, which is the remnant of the flower (or the rose)
At this point, enjoy passing the berries through a food mill to remove the skins and seeds, collecting the pulp
Weigh the obtained pulp and add an equal weight of honey (I recommend acacia honey or a multifloral honey that is fluid and not too aromatic)
Your preserve is ready, transfer it into containers and enjoy it
Keep in mind that since it is not cooked, it still contains all its vitamin C
