

Rosa Canina jam with honey is a delicious sweet preserve made with Rosa Canina berries and honey. This jam is rich in vitamin C and is perfect for spreading on slices of bread or for filling pastries.


Pick the Rosa Canina berries when they are ripe enough to come off the branch easily; collect plenty because each berry contains very little pulp.
Clean them and remove the small black tip at one end, which is just the remnant of the flower (that is, the rose).
At this point, have fun pushing the berries through a food mill to remove skins and seeds, collecting the pulp.
Weigh the resulting pulp and add an equal weight of honey (I recommend an acacia or wildflower honey that is fluid and not too strongly aromatic).
Your preserve is ready; transfer it into containers and enjoy it.
Keep in mind that since it is not cooked it still retains all its vitamin C.
