Preparation

  1. STEP 1 OF 6

    Score the rack bones of the lamb, then sear it in an oiled baking dish in a preheated oven at 220°C for 10 minutes

  2. STEP 2 OF 6

    Then remove it from the oven, season with salt and pepper, and flavor it with the rosemary and 3 cloves of garlic

  3. STEP 3 OF 6

    Continue cooking in the oven for 25 minutes, basting with the white wine

  4. STEP 4 OF 6

    Meanwhile, chop the remaining rosemary and 2 sprigs of parsley

  5. STEP 5 OF 6

    Mix the chopped herbs with the breadcrumbs

  6. STEP 6 OF 6

    At the end of cooking, brush the rack with the egg white and sprinkle with the seasoned breadcrumbs
