Rustic arancini are a flavorful and authentic variation of Sicilian arancini. These delicious rice bites are filled with a mix of boiled rice, peas, onion, tomato sauce, grated Parmesan cheese and chicken livers. They are then dipped in egg, coated with breadcrumbs and fried until perfectly golden and crispy. The crunchy exterior and soft, tasty interior make rustic arancini an irresistible appetizer.
Chop the onion and sauté it in a saucepan with 20 g of butter over moderate heat until it begins to brown
At this point add the cleaned chicken livers cut into small pieces, let them brown for 5-6 minutes, then add the peas, the tomato sauce and the hot broth, season with salt and let cook over low heat for 25-30 minutes
Place the boiled rice, one beaten egg, the grated Parmesan and the remaining butter in a bowl; mix well to combine everything, then form from the mixture as many arancini as desired using the appropriate tool
Place a little of the prepared filling into each arancino using a teaspoon
Dip all the arancini first in the other beaten, salted egg and then in the breadcrumbs
