
Rustic Minestrone is a peasant-style soup typical of Italian cuisine. Clean the vegetables and cut them into chunks
Chop the celery and onion and cut the pancetta into small cubes
Sauté the onion and celery in oil in a pot, then add the pancetta
After a few minutes add the prepared vegetables, pour in the broth, check the salt and let cook for about 40 minutes
Then add the lancette pasta and at the end of cooking season with chopped basil and parsley
If desired serve with grated Parmigiano
