
Scottish biscuits are delicious treats of Scottish origin, crisp and fragrant. Made with flour, melted butter, milk, granulated sugar, fresh yeast and a pinch of salt, they are perfect to enjoy at any time of the day.





Sift the flour with the sugar and a pinch of salt and make a well.
Warm the milk, dissolve the yeast in it and slowly pour it into the center of the work surface, gradually incorporating the melted butter as you go.
Knead everything vigorously until you obtain a smooth, soft dough.
Place the dough ball to rise for one hour, covered, in a warm place.
After this hour, roll the dough into a sheet half a centimeter thick and cut it into small oval cookies.
Flour a baking tray, arrange the cookies on it spaced well apart, and bake for about half an hour.
