Carefully clean a 1000 g sea bass and cut it into 4 fillets
In a baking dish pour 1/2 glass of olive oil, 4 fennel hearts finely chopped, the sea bass fillets, salt, pepper, a sprig of chopped parsley and 50 cl of fish stock obtained by boiling the bones, head and skin of the sea bass for 10 minutes with 1 sliced carrot and 1 sliced onion, a few peppercorns and 1 bay leaf
Cook for 8 minutes in the oven at 250°C
Serve with a little lemon juice
