Set the mussels aside and strain their cooking liquid.
Brown the sliced onion and chopped garlic clove in a large pan with 4 tablespoons of oil.
Add the cleaned and cut squid and let them flavor for a few minutes.
Add the blanched, peeled, and diced tomatoes.
Let everything simmer for 5 minutes, then add the saffron diluted in 3 ladles of hot broth.
Add the mussel cooking liquid, rice, and peas, mix well, cook for 15 minutes, then add the shrimp.
Finish cooking by adding more broth if needed.
At the end of cooking, add the mussels to the paella and garnish with some whole shrimp and lemon wedges.
