    Knead the dough with the palm of your hand until you obtain a smooth, elastic and consistent dough free of lumps

    Place the dough in a floured bowl, cover with a cloth and let it rise for 1 hour in a warm place (about 20 °C)

    Divide the dough with your hands into four discs of about 22 cm in diameter

    Handle the dough as you would bread dough: press firmly with the palms of your hands from the center towards the edges to remove the air

    Flatten the discs, leaving the outer edge slightly thicker
