Sicilian cannoli are typical sweets of the Sicilian tradition. They consist of a crispy and crumbly shell, filled with a delicious cream of ricotta, sugar, and chocolate. Cannoli are a triumph of flavors and a real delight for the palate. They are usually consumed during the Christmas holidays in Sicily, but they are great to enjoy at any time of the year.
Place the flour on the cutting board and knead with the other ingredients for the shells for 1/2 hour.
Then roll out the dough with a rolling pin until you get a very thin sheet; cut into oval shapes that will be wrapped around small cane pieces; fry them in plenty of lard or oil.
It is advisable to grease the canes before using them and to seal the edges of the dough shapes with a little egg white.
After filling the cannoli with ricotta mixed with sugar, vanilla, and brandy, cover the ends with chocolate chips.
Finally, sprinkle with powdered sugar.
