Sicilian cannoli are typical sweets of the Sicilian tradition. They consist of a crunchy and crumbly pastry, filled with a delicious cream of ricotta, sugar and chocolate. Cannoli are an explosion of flavors and a real delight for the palate. They are usually consumed during the Christmas festivities in Sicily, but are excellent to enjoy at any time of the year.
Put the flour on the work surface and knead it with the other ingredients for the shells for half an hour.
Then roll out the dough with a rolling pin until you obtain a very thin sheet; cut into small oval shapes that will be wrapped around small pieces of cane; fry them in plenty of lard or oil.
It is advisable to grease the canes before using them and to glue the edges of the pastry shapes with a little egg white.
After filling the cannoli with the ricotta mixed with sugar, vanilla and brandy, coat the ends with chocolate chips.
Finally, sprinkle with powdered sugar.
