

Sicilian cannoli are typical sweets from the Sicilian tradition. They consist of a crunchy and crumbly shell filled with a delicious ricotta cream, sugar, and chocolate. Cannoli are a feast of flavors and a true delight for the palate. They are usually consumed during the Christmas holidays in Sicily, but they are great to enjoy at any time of the year.
Put the flour on the work surface and knead it with the other ingredients for the shells for 1/2 hour.
Then roll out the dough with a rolling pin until obtaining a very thin sheet; cut into oval shapes that will be wrapped around pieces of cane; fry in plenty of lard or oil.
It is advisable to grease the tubes before using them and to glue the edges of the pasta shapes with a bit of egg white.
After filling the cannoli with ricotta mixed with sugar, vanilla, and brandy, cover the ends with chocolate chips.
Finally, dust with powdered sugar.
