Zeppole are a delicious fried dessert typical of Italian tradition. They are soft inside, crunchy outside, and perfect to enjoy during Carnival. Simple zeppole are made with a leavened dough based on flour, water, and yeast, then fried and dusted with powdered sugar. You can further enrich them by adding colored sprinkles or diavolilli.
Throw the flour all at once into the boiling water with a pinch of salt and stir until it becomes smooth
Then place it on the work surface that you have just greased with oil and work it again by beating it with the rolling pin until the dough becomes quite elastic
Then break off some balls and with the palm of your hand make sticks as thick as your little finger
With these, folding them over themselves and crossing them, make oblong doughnuts
Then fry these small zeppole in plenty of oil over moderate heat until they become golden; occasionally prick them with a fork
Lift them out and let them drain on paper
Meanwhile, put the honey and sugar with a little water in a pan and mix these ingredients until they form a thread: add cinnamon and vanilla
Keeping the heat to a minimum, dip the zeppole in the syrup and sprinkle them with diavolilli
Pile them on a plate, arranging them in a dome shape, and pour over any remaining honey
