Preparation

Prepare the skewers on a long kitchen skewer starting with a piece of veal, a quail rolled in a slice of prosciutto with salt and sage inside, another piece of veal, another quail wrapped in a slice of prosciutto.

Place a saucepan on the heat, ensuring the quails do not occupy more than 2/3 of its capacity, and bring it to the right temperature.

Insert the skewers, browning them on all sides, sprinkle with white wine, let it evaporate, lower the heat, and complete the cooking for about 30 minutes, turning occasionally.
