Place a pan on the heat large enough that the quails do not occupy more than two-thirds of its capacity and bring it to the proper temperature.
Insert the skewers and brown them on all sides, sprinkle with white wine and let it evaporate, reduce the heat and finish cooking for about 30 minutes, turning occasionally.
