Start preparing the apple cake by beating the butter together with the granulated sugar in a bowl until you obtain a fluffy mixture.
Add the eggs, one at a time, the milk and the lemon zest. Mix well after each addition.
Add the sifted flour and baking powder, then mix with a spatula to combine. Also add a pinch of salt.
Peel the apples, cut them into not-too-large cubes and add them to the batter, mixing carefully. Pour everything into a 24-centimeter round springform pan that has been buttered and floured, smoothing the top with a spoon.
Bake in a preheated oven at 180°C for about 40 minutes, or until a skewer inserted into the center of the cake comes out dry. Remove from the oven and let cool completely before unmolding. Serve the apple cake dusted with powdered sugar, if desired.
It can be served with powdered sugar, whipped cream or ice cream. Store in a cool place under a glass dome for 1-2 days.
