

Sole bites are a delicious main course made from sole fillets flavored with the smoky taste of Speck and the fresh aroma of arugula. Easy and quick to prepare, they are perfect for a light and tasty dinner.
Trim the arugula, then wash it under running water and dry it thoroughly, then coarsely chop it.
Lay the slices of Speck over the fish fillets, season with salt and pepper, then spread the arugula on top.
Roll each fillet onto itself to form small rolls, which you will tie with kitchen string.
Lightly oil a baking tray, preferably non-stick, place the prepared rolls on it and cook them in a preheated oven at 220°C for about 15 minutes.
Serve the sole bites immediately, hot, on individual plates.
