Clean the arugula, then wash it under running water and dry it carefully, then chop it coarsely
Lay the speck slices on the fish fillets, season with salt and pepper, then spread the arugula on top
Roll each fillet onto itself to form small rolls, which you will tie with kitchen string
Lightly oil a baking dish, preferably non-stick, place the prepared rolls inside, and bake in a preheated oven at 220 degrees for about 15 minutes
Serve the sole bites immediately, piping hot, on individual plates
