In a saucepan, melt the butter, add the onions, salt them, and cook them for about an hour over low heat, covered, adding a few tablespoons of hot water
They should reduce to a purée but without taking on color
Prepare the béchamel, mix it with the onion purée, add the cream, and heat over moderate heat
