Sour cherry juice is a sweet and refreshing beverage, perfect to enjoy during the summer. The sour cherries give the juice an intense and slightly tart flavor, balanced by the sweetness of the sugar and the freshness of the lemon juice. Cinnamon and cloves add a spiced note that completes the taste of the juice.
Remove the stems from the sour cherries, wash them and cook them whole in a saucepan with a little water
Then press them through a fairly coarse sieve
Weigh the juice obtained and add sugar at a ratio of 500 g for every 1000 g of juice
For optional flavoring you can add the grated zest of half a lemon or a pinch of cinnamon or a couple of cloves
Mix well and fill into jars, leaving 1.5 cm from the rim
Apply the lids and boil for 25 minutes
