Spring beans are a light and tasty side dish perfect for accompanying spring dishes. Made with fresh beans, garlic, onion, basil, and celery, they are enriched with grated Parmesan cheese and seasoned with olive oil, salt, and pepper. A side dish full of flavors and nutrients!
Boil the beans with onion and celery, drain them and place them in a serving dish
Put the basil, garlic, Parmesan, and 1 tablespoon of oil in a blender and blend for a few seconds
Add more oil, 2 tablespoons of the bean cooking broth, and 1 tablespoon of beans, and blend again until a smooth sauce is obtained
Adjust with salt and pepper and pour it over the beans, mixing well before serving
