Cut the chicken into pieces and flour it
In a large pan, sauté the pearl onions with a good piece of butter; when they start to color, add the washed and finely chopped carrot and celery stalk
Continue cooking the sauté for another 5 minutes, adding a little water if necessary
Add the chicken pieces and brown them well, pour in half a glass of red wine and add the peeled and crushed tomatoes, salt and pepper, cover with a lid and continue cooking over very low heat
