Stollen is a traditional German Christmas cake with an ancient history. This rich and fragrant sweet bread originates from the Saxony region and is traditionally prepared during the Advent period. The recipe includes flour, yeast, sugar, vanilla sugar, salt, bitter almond flavor, lemon flavor, rum flavor, ground cardamom, nutmeg, eggs, butter or margarine, lard, ricotta, candied fruit, dark sultanas, light sultanas, and almonds or hazelnuts. Mix flour and yeast on the table
Form a well and pour sugar, eggs, flavors, and salt into the center
With part of the flour, form a paste and place cold butter cut into pieces, lard, ricotta, candied fruit, sultanas, and ground almonds on top
Mash everything together and knead quickly
If the dough is sticky, add a little flour
Shape into the typical stollen form and place on a greased and floured baking sheet
Bake for about 75 minutes at medium temperature (150-175 degrees)
At the end of baking, spread with melted butter (50 g) and sprinkle with powdered sugar (50 g)
