Beat the egg whites until stiff
Beat the sugar with the egg yolks and add the cheese, mixing well
Combine the two mixtures and beat until smooth
In a baking tin arrange a layer of crushed biscuits or pre-baked shortcrust pastry, place the pears sliced thinly, then pour the mixture over
Bake in the oven for 40 minutes at 180°C
Once cooked, allow to cool then moisten with orange liqueur
