Strawberry jam is one of the most beloved homemade jams. Here are some general rules regarding jams: Use only healthy fruit for making jams; wash the fruit well and remove pits or seeds; count 1000 g of sugar for every 1000 g of fruit; do not cook too much at once; take 1000 g per cooking: this way the sugar does not crystallize and the jams will retain their beautiful color; cook over medium heat until a light foam forms on the jam, then fill the jars; pour liquid paraffin over the jam or stretch a cellophane sheet over the jars; let the jam cool slowly and store it in a dry place with little light
