Cut the pineapple horizontally in half
Using a spoon, remove the flesh, leaving the shell intact
Cut the flesh into small cubes, as well as the other fruit
Mix, add sugar and sprinkle with a glass of Champagne and two small glasses of brandy
Put the fruit salad and the two pineapple shells in the fridge
Shortly before serving, fill the shells with the diced fruit and top each with a dome of vanilla ice cream, which can be store-bought or homemade
On a serving platter, spread a layer of crushed ice, place the pineapple halves on top and serve
