Sun Fritters are delicious appetizers made with corn, eggs, grated Parmesan, and herbs. They are crispy on the outside and soft on the inside, perfect for starting a meal in a tasty way.
Drain the liquid from the corn
In a salad bowl, beat the two eggs with a pinch of salt
Continue mixing with a fork and add the grated Parmesan, white flour, and chopped thyme
Add the corn and let it rest for 2 or 3 minutes
In a non-stick pan, add a drizzle of oil
Spoon the mixture into the oil, forming fritters about 5 cm in diameter
Cook them on both sides and once cooked, place them on absorbent paper to dry
Garnish with a halved cherry tomato and a sprig of fresh mint
