
Sweet Crepes
Sweet crepes are thin sweet pancakes, ideal for breakfast or as a dessert. They are very versatile and can be filled with jam, chocolate cream, fresh fruit, or simply sprinkled with powdered sugar.

Preparation

Whisk the eggs in a bowl

Gradually add the flour while thinning with milk, continuing to whisk the mixture

At the end, you will have a smooth, fluid, and stringy batter

Let it rest for about an hour

With a brush lightly dipped in oil (or a piece of butter wrapped in gauze), grease the well-heated pan and pour a small amount of batter in the center

Quickly swirl the pan so that no holes form

When the edges of the crepe lift, turn it over with the help of a spatula

Crepes can be stored stacked on top of each other for a couple of days (in the fridge, of course)
