The Sweet Hedgehog is a delightful dessert made with a sponge cake ring, butter, powdered sugar, egg yolks, brandy, almonds, espresso, and Marsala wine with egg. This traditional Italian dessert is soft in the center and crunchy on the outside, thanks to the almonds on the surface. An irresistible dessert that will make your Christmas table even more special!
Cut the sponge cake into 1 cm slices, then soak one side of the slice with Marsala and place it on the plate to form the base of the Hedgehog; it should be a large slice.
Spread a thin layer of cream (made with butter, powdered sugar, egg yolks, and brandy), then another layer of sponge cake, this time soaked in espresso, followed by another thin layer of cream.
In short, make four or five layers of sponge cake to give the shape of a 'hedgehog', using a knife and fork, which we will finally cover entirely with cream and decorate (with a lot of patience) with spikes formed by almonds that we have blanched in water, peeled, cut into strips, and lightly toasted in the oven.
The head of the hedgehog will be formed by another piece of sponge cake soaked in coffee and Marsala, also covered with cream, where the ears will be 2 candies and the eyes two coffee beans.
