Syllabub is a traditional English dessert made of an aromatic, light cream based on fresh cream, sugar and liqueur, usually sherry or cognac. It is served chilled, ideal for a refreshing break on hot summer days.
Wash the lemon thoroughly and, using a sharp paring knife, remove the peel (only the yellow part); then place it in a bowl with the sherry and let it infuse for about 12 hours.
Strain the sherry through a sieve into a large bowl, add the cognac and stir; then add the cream, the egg white, the sugar and the nutmeg.
Whip the mixture with an electric whisk until you obtain a light, frothy and homogeneous cream.
Pour it into serving cups and keep them in the refrigerator for at least 5 hours.
Serve the Syllabub in the same cups, advising guests to stir it gently before tasting.
