
Tanghulu is a traditional Chinese sweet made with fresh fruit, here with strawberries and grapes, skewered and caramelized with sugar.
Skewer the fruit onto wooden sticks.
Mix the sugar with water in a small saucepan and bring to a boil, without stirring.
Let the sugar syrup simmer for about 15 minutes and measure the temperature with a sugar thermometer.
As soon as the syrup reaches 150 °C, remove the pan from the heat.
Prepare a bowl with ice water.
Gently dip the fruit on the skewers into the hot syrup, rotating it until it is completely coated.
Let it drain a bit and dip the skewers in the ice water.
Remove, let drain, and cool a bit.
Serve immediately.

If not consumed immediately, do not cool the skewers in ice water. Let the sugar drain well, dry, and cool completely on parchment paper. They stay fresh for about 12 hours.
Depending on the season, you can use other types of fruit like mandarins, blueberries or raspberries.
