Place the cheese in a bowl and work it with a wooden spoon
Season it with a pinch of salt and a generous grind of pepper, then add the chopped olives to the mixture (except for 12 which you will use for decoration)
Place one slice of ham at a time on the cutting board, spreading it out well, place a strip of cheese on top and roll the ham to form a cannelloni
Prepare all the others in the same way
Secure each cannelloni with a toothpick into which you will insert a pitted olive
Serve as an appetizer or as a fresh summer main course
