Tempura sauce is a delicious Japanese sauce, perfect for pairing with fried side dishes. It is a light and aromatically balanced sauce that adds a touch of flavor to your dishes. Its base is dashi, a Japanese fish-based broth, enriched with soy sauce, sake, sugar, and ground ginger.
Bring 30 cl of water to a boil
Put the powdered dashi in a small saucepan and pour in the boiling water
Stir until dissolved
Incorporate the other ingredients
Put the saucepan over medium heat and bring to a boil; let simmer for five minutes then remove from heat
Distribute the sauce into four heated individual bowls and place one in front of each diner
Dashi is a concentrated fish broth made from skipjack tuna and seaweed; in Japanese cuisine it forms the base of many sauces and soups
You can find it in specialized stores that sell oriental products
Buy it in powder form and dilute it in hot water
If you can't find it, use a strong chicken broth which however will not give the same exquisite fish flavor
