Cut the Sponge Cake into two disks and soak them with coffee
Beat the yolks with the sugar, add the mascarpone, 2 tablespoons of rum, and 2 egg whites beaten to stiff peaks
Layer the Sponge Cake placed in a springform pan lined with parchment paper with half of the cream, cover with the other half, and place in the freezer for 4-5 hours
At the time of serving, remove from the mold and dust with cocoa powder
