Tomatillo sauce is a green sauce made from tomatillos, peppers, and cilantro. It is a spicy and fresh condiment, perfect for flavoring Mexican dishes or as a dip for corn chips.
Remove the outer skin of the tomatillos
Cook in 4 cups of water for 10 minutes
Drain
Place in a blender with 1 cup of cold water, garlic, peppers, onion, and cilantro
Blend until almost liquid
Heat the oil in a saucepan and pour in the sauce
Season with salt and sugar
Lower the heat and simmer for 5 minutes
If it becomes too acidic, add another teaspoon of sugar
Variations: for a sauce with a "toasted" flavor, heat the tomatillos in a heavy pan or on a grill, turning them frequently until the skins are almost brown and the flesh is soft
Remove the skin and use the tomatillos
Do not blend the sauce for a chunky texture
Excellent served with chicken, pork, or beef burritos, tacos, chicken enchiladas, and tostadas
Blender
Store in the refrigerator in an airtight container.
