Tomato preserve is a traditional method for preserving the freshness and flavor of ripe tomatoes. This simple recipe requires only two ingredients: ripe tomatoes and basil. Tomato preserve can be used as a base for sauces, pasta sauces and soups, or spread on crostini for a tasty appetizer.
Remove the stems from the tomatoes and wash them very thoroughly.
Crush them to remove the internal liquid and pass them through a food mill.
Repeat this operation several times to remove any remaining seeds or skin.
Once this is done, you can begin pouring the tomato purée into the bottles, placing a few basil leaves in each one.
Obtain metal caps and seal the bottles using the appropriate capping machine.
Now arrange them in a large pot lined with rags on the bottom and place more rags between each layer of bottles so they do not knock against each other.
Cover with water, bring to a boil and cook for a couple of hours.
Let cool and store the bottles in a cool, dark place.
