Gratin tomatoes are a simple and tasty side dish typical of Italian cuisine. Ripe tomatoes are stuffed with a mixture of breadcrumbs, black olives, capers, parsley, oregano and salted anchovies, then gratinated in the oven until a golden and crispy crust is obtained. This dish is perfect to accompany meat or fish and can be served hot or at room temperature.
Wash the tomatoes, cut them in half and let them drain with the cut side down
Then mix in a plate part of the oil with the breadcrumbs, the pitted black olives cut into pieces, the capers, the rinsed anchovies finely chopped, pepper, parsley and basil
Cover the halved tomatoes with this mixture and place them in a greased baking dish where you will pour a drizzle of oil on each
Bake in a hot oven until the bread becomes golden
