Gratin tomatoes are a simple and tasty side dish typical of Italian cuisine. Ripe tomatoes are stuffed with a mixture of breadcrumbs, black olives, capers, parsley, oregano, and salted anchovies, then baked until a golden and crispy crust is formed. This dish is perfect to accompany meat or fish and can be served either hot or at room temperature.
Wash the tomatoes, cut them in half, and let them drain with the cut side down
Then mix in a dish some of the oil with the breadcrumbs, pitted and chopped olives, capers, finely chopped desalted anchovies, pepper, parsley, and basil
Cover the tomato halves with this mixture and place them in an oiled baking dish, drizzling each with a little oil
Bake in a hot oven until the breadcrumbs turn golden
