
Tortelli are delicious traditional Italian sweets. They are made with a thin, crispy dough and filled with a tasty sweet cream. Perfect to enjoy during the Christmas season or at special celebrations.

This is a typical carnival sweet
Bring 1/4 liter of salted water and the butter to a boil
Add the flour all at once and cook for 10 minutes, stirring constantly
Remove from the heat, let cool slightly, then incorporate the eggs, alternating the yolk with the corresponding egg white beaten to stiff peaks
Work the dough with a whisk and prepare a pan for frying with plenty of oil
When the oil starts to smoke, drop small spoonfuls of batter into it and cook the tortelli, continuously removing them with a fork and turning them over; in the end they should double in volume
Serve them dusted with powdered sugar, preferably hot
