Tortelli are delicious traditional Italian sweets. They are made with a thin and crispy dough, filled with a tasty sweet cream. Perfect to enjoy during the Christmas season or at special celebrations.
This is a typical carnival dessert
Boil 1/4 liter of salted water with the butter
Pour the flour all at once and cook for 10 minutes, stirring constantly
Remove from heat, let cool slightly, then incorporate the eggs, alternating the yolk with the respective egg white beaten to stiff peaks
Work the dough with a whisk and prepare a frying pan with plenty of oil
When it starts to smoke, drop small spoonfuls of dough and cook the tortelli, continuously turning them with a fork so they spin: in the end, they should double in volume
Serve them dusted with powdered sugar, preferably warm
