Veal rolls with capers are a delicious first-course dish typical of Italian cuisine. Thin slices of veal are filled with a tasty combination of salted capers, chopped parsley and lemon juice. They are then rolled and cooked in a pan with olive oil until tender and succulent. Their unique flavor and elegant presentation make them perfect for a special dinner or a festive occasion.
Rinse the capers under running water, squeeze them dry and chop them
Put a little salt, a grind of pepper and the lemon juice in a bowl and mix; add the oil in a thin stream while whisking with a fork and fold in the capers and parsley
Cut a large sheet of baking paper into rectangles about 15 by 20 cm; place a slice of meat in the center of each and season it with part of the sauce
Roll up the slices of meat without tightening; wrap them in the baking paper, twisting the ends to give the parcels the shape of a candy
Arrange the individual pieces on a tray just taken out of the hot oven, bake them at 200°C for about 8 minutes then serve
