Rinse the capers under running water, squeeze them and chop them
Put a little salt, a grind of pepper, and lemon juice in a bowl and mix; slowly add the oil while beating with a fork and incorporate the capers with the parsley
Cut a large sheet of baking paper into rectangles of 15 by 20 cm; place a slice of meat in the center of each and season it with part of the sauce
Roll up the slices of meat without tightening, wrap them with the baking paper, closing the ends to give the packets a candy shape
Place the individual pieces on a tray taken from the hot oven, bake them at 200 degrees for about 8 minutes, then serve
