

Veal rolls with capers are a delicious typical Italian first course dish. The thin slices of veal are filled with a tasty combination of salty capers, chopped parsley, and lemon juice. Rinse the capers under running water, squeeze them and chop them
Put a little salt, a grind of pepper, lemon juice in a bowl and mix; add the oil in a thin stream while whisking with a fork and incorporate the capers with the parsley
Cut a large sheet of parchment paper into rectangles of 15 by 20 cm; place a slice of meat in the center of each and season it with some of the sauce
Roll the slices of meat without tightening, wrap them in parchment paper sealing the ends to give the packets the shape of a candy
Place the individual pieces on a plate just taken from the hot oven and bake them at 200 degrees for about 8 minutes, then serve at the table
