
Vegetable cheese balls are a tasty side dish made from yellow potatoes, soft salty Friulian cheese, and fresh herbs like spring onions, fennel, and lemon juice. Perfect to serve hot as an accompaniment to meat or fish main dishes.











Boil the potatoes and while still hot, peel them and pass them through a potato masher
Incorporate diced cheese, sliced spring onions, chopped fennel, beaten egg, and a splash of lemon juice into the puree
Season lightly with salt and mix well
Form small balls, dust them with flour, and fry them in oil
Drain them when they are golden brown and serve hot
