

The vegetable-filled calzone is a delicious Italian dish made with pizza dough stuffed with chard, sultana raisins and hot chili pepper. This vegetarian recipe is perfect to enjoy as an appetizer or as a light main course. The calzone, folded into a half-moon, is baked until golden and is irresistibly crispy and flavorful. Soak the sultana raisins in a bowl with warm water to soften them
Trim and wash the chard, drain thoroughly and dry with a kitchen towel
Cut them into strips, removing the tough part of the stems
Drain and squeeze the raisins and coarsely crumble the chili pepper
In a bowl put the chard, the raisins, a pinch of salt and the chili pepper, drizzle everything with oil and mix to combine
On a pastry board or work surface put the flour, a pinch of salt, the bread dough and two tablespoons of oil and knead with your hands, pouring in enough warm water to obtain a fairly soft dough
Work it vigorously for a few more minutes then, with a lightly floured rolling pin, roll out the dough into a thin disk
Oil a baking sheet and turn the oven on to 1700
Place half of the dough disk on the baking sheet and spread the chard filling over it
Spread the filling with a wooden spoon and cover with the other half of the dough disk, sealing the edges carefully
Lightly brush the surface of the calzone with oil and bake in the oven for thirty minutes
