Walnut sauce is a creamy and aromatic condiment, ideal for accompanying pasta dishes or as a sauce for side dishes. Its origin dates back to ancient Ligurian cuisine, known for the use of walnuts in culinary preparations. This sauce is easy and quick to prepare and gives a unique taste to dishes.
Blend 500 g of shelled walnuts together with a nice bunch of finely chopped basil
Melt about 50 g of butter in a pan, preferably aluminum, pour in the aforementioned mixture and cook for a couple of minutes, stirring often to prevent sticking
Add a bit of tomato sauce to give a pinkish color and 2 packs of cooking cream
Simmer over very low heat and turn off
Season the pasta by sprinkling it with plenty of Parmesan
