Walnut sauce is a creamy and aromatic condiment, ideal for accompanying pasta dishes or as a sauce for side dishes. Its origin dates back to ancient Ligurian cuisine, known for the use of walnuts in culinary preparations. This sauce is easy and quick to prepare and gives a unique flavor to dishes.
Blend 500 g of shelled walnuts together with a good bunch of finely chopped basil
Melt about 50 g of butter in a pan, preferably aluminum; pour in the walnut mixture and cook for a couple of minutes, stirring often to prevent sticking
Add a little tomato sauce to give a pink color and two packs of cooking cream
Let simmer over very low heat, then turn off
Toss with pasta and sprinkle generously with Parmigiano
