The Yule Log, also known as bûche de Noël, is a traditional Christmas dessert. It is a sponge cake roll filled with chestnuts, chocolate, and cream, covered with dark chocolate and decorated with chopped almonds. This dessert originates from France but has also become popular in Italy during the holidays.
Beat the egg yolks with the sugar, then fold in the whipped egg whites, and finally add the flour, baking powder, salt, and lemon zest.
Spread the batter in a greased and floured cake pan and bake for 20 minutes.
Remove from the oven and invert onto a damp cloth.
Brush with Amaretto di Saronno and immediately shape into a roll.
In the meantime, prepare the filling by sieving the chestnuts and incorporating all the other ingredients.
Spread this cream over the sponge cake and roll it up.
For the topping, prepare the melted chocolate and brush it over the log, then roll it in the almonds cut into small strips.
