
The Christmas log, also known as bûche de Noël, is a traditional holiday dessert. It is a rolled sponge cake filled with chestnuts, chocolate, and cream, covered in dark chocolate, and decorated with chopped almonds. This dessert originated in France but has also become popular in Italy during the holidays.

Beat the egg yolks with the sugar, then incorporate the whipped egg whites, and finally add the flour, baking powder, salt, and lemon zest.
Spread the batter in a greased and floured cake pan and bake for 20 minutes.
Remove from oven and turn it over on a damp towel.
Brush with Amaretto di Saronno and immediately shape it into a roll.
Meanwhile, prepare the filling by passing the chestnuts through a sieve and incorporating all the other ingredients.
Spread this cream over the sponge cake and roll it up.
For the topping, prepare the melted chocolate and use it to brush over the log and roll it in the finely chopped almonds.
